How bored with breakfast are you? Time to mix it up with this easy fertility food breakfast recipe and try something new: Collard Green Breakfast Burrito. Really, it tastes great!

Powerhouse Breakfast
The basics are: collard greens, lean ground turkey, any additional veggies and spices you want to add. You get proteins and greens for breakfast, which is a strong way to start the day. More veggies is always good! And spices are often antioxidant and therapeutic, too. I show you how to cook ground turkey (in case you are just learning how to cook) and because you cook a pound or so of turkey, you have extra, which I’ll show you how to use in future Easy Fertility Food videos.
Fast, Healthy, Convenient Fertility Food
Cooking the turkey takes the most time, around 11-15 minutes (it depends on how much turkey, and how big the pan is. Bigger pans cook the meat faster; more turkey takes more time.). However, assembling the wrap once the meat is cooked takes less than 5 minutes! You can store half the extra in a Pyrex in the fridge to use soon, and the other half can be frozen for use in a few days.
You can cook the turkey on your day off, and have easy breakfast for the week. Yay!
But, that means time is no longer an excuse for not eating a good breakfast: you can make and eat this almost as fast as a bowl of cereal.
Variations to Mix it Up: Fertility Food Should Taste Good!
I kept the recipe simple. Some variations you can do:
Garlic and Onions: I didn’t use garlic or onions, because I don’t tolerate them well. But YOU can!! Garlic and onions add flavor and various vitamins (B vitamins, Vit C). Without these, the recipe is also FODMAP friendly.
Other veggies: I like dicing daikon radish (a mild white radish used in Japanese cooking) and adding that to the wrap. You can add any diced or shredded veggies: carrots, radish, sugar snap or snow peas, zucchini or tomatoes. Whatever veggie you want, they are all good!
Spices: you can add different spices to give it different flavor. Oregano or thyme for a European flair; ginger and sesame for an Asian accent. And, if you have taken my fertility reset course (fertilityresetonline.com) you know that you can add as much salsa and guacamole as you want, for a Tex-Mex kick! Just don’t make it too spicy, though; too much heat is not good for your energetic balance. Fertility food can and should taste good!
Buying and Storing Collard Greens
Big, intact, healthy looking green leaves are best. You want to avoid leaves with major tears, or that have gone yellow, or that already have moldy spots on them.
Once you get them home, don’t keep the collards in the plastic bag, they will go bad faster. The best way to store greens is to use a thin tea towel, wet it down and wring it out, and wrap the leaves in it. Your greens will stay fresh much longer this way.
Fertility Food Fast, But Not Just For Fertility
Why is this good for fertility? Because it gives you an easy way to eat greens, which most people struggle with; because it keeps your blood sugar stable, which improves fertility hormone signalling; and because it keeps you away from the junky dessert-for-breakfast menu that most people eat. You know, cereal, bagels, toast: the high carb, low nutrient food that passes for breakfast but really isn’t doing you any favors. In fact, this isn’t just fertility food, it’s healthy food for everyone.
Pyrex and Why Stainless Steel
Two viewers have asked questions about the Pyrex, and why not cast iron. First, ONLY glass is safe for storing food. I discuss why in my course www.fertilityresetonline.com. Pyrex is a brand name, but any glass storage is fine. Glass is non-reactive, and that is critical for guarding against endocrine disruptors.
Second, stainless v cast iron. My focus is on easy recipes. Cast iron is great, but it’s not easy. Clean up takes time, and the pans are heavy. You can totally use cast iron if you want. Stainless is easier to use and cleans up faster. It’s a matter of personal preference. What is not ok is non-stick: see my course for why you want to avoid it at all costs.
