True Confessions: I’m A Sugar Monster!
I love sugar. I love sweets. I’m aware they are terrible for health and for fertility. So I’m always looking for a way to get my sweet fix while eating healthy. I threw this recipe for 5/20 Sweet-Tart Raspberry Chia Dessert together one night when I got home late from work and was DESPERATE for something sweet, but didn’t want the sugar high at night. I was thrilled when it worked. My Sweet Tooth Fix: 5/20 Sweet-Tart Raspberry Chia Dessert is refreshing, sweet, tart, filling and worked like a charm! Easy and (Relatively) Quick
If you’ve watched my other food recipe videos, you know I’m into fast, healthy food. (Check out my Collard Burrito, Fertility Boosting Trail Mix, and TexMex Salad blogs, and the videos on my Youtube Channel.) I’m not a patient nor complicated cook. The magic of the microwave, the convenience of frozen fruit, and the weird jelly thing that chia seeds do make this a super snack/dessert. The thing that takes the longest, in fact, is the chia seed jelly goo thing. That’s where the 5/20 comes in.
5/20: That Weird Chia Seed Goo Thing
The thing that takes the longest in this recipe is the time that the chia seeds need to soak. If you’ve never worked with chia seeds, you’re in for a fun surprise. Chia seeds start out as shiny, tiny black seeds.
Put them in liquid, however, and 15-20 minutes later they get a gooey gel-bubble around them.. It’s weirdly cool. Chia seeds can absorb 10x their weight in liquid, and that actives the soluble fiber called mucilage, aka the goo. The fiber carries nutrients and is an important pre-biotic (more on chia seed nutrition here.) It also means chia seeds make a super easy and nutritious pudding.
The goo is actually really good for you. Soluble fiber is an important nutrient. It also makes eating hydrated chia seeds a fun texture experience.
It only takes 5 minutes to throw together this dessert, but for a really pudding-like consistency, you want to let it sit for at least 20 minutes.
Ingredients
2 TBS (or more, if you want a bigger serving) of organic chia seeds
Frozen raspberries (how ever much you want to make)

That’s it! You’ll also need a microwave and a bowl to put the pudding in. Make sure the bowl is big enough to allow the chia seeds to expand!
